Summary

Today's products, whether agricultural or industrial, are identified by consumers for their quality and nutritional characteristics. To satisfy the demands of potential customers, the current market offers a great variety of products always with the expected quality (consistency). New industrial processes are used to develop new products with an optimal use of the raw material, and the quality of the raw material is key to guarantee the quality of the final product. There are agricultural products such as coffee that give better quality when processed fruits are mostly ripe and the possibility of producing particular qualities in which different contents of coffee berries at different stages of development are mixed has not yet been explored. Various principles such as weight, shape, firmness, moisture and color are used to determine the maturity of agricultural products.
