The present invention relates to a device and a method for grading seeds, for example coffee seeds. The device is characterized by: a seed feeding mechanism; a seed containment mechanism connected to the seed feeding mechanism; an electronic seed display system operatively arranged in the seed containment mechanism; a seed ejection mechanism connected to the outlet of the seed containment mechanism; the electronic seed display system has a central processing unit implementing methods for sorting seeds. The method is characterized by the stages of: Obtaining a digital image of the seed; storing the RGB components of the image obtained in the step; generating a histogram for each colorimetric and brightness component of the step histogram; determining the thresholding point according to Otsu's method; obtaining a binary image; eliminating areas; obtaining edges; obtaining vectors corresponding to the seeds; identifying black seeds; identifying seeds with defects related to fermentation and immaturity; identification of seeds with mechanical damage; and actuation of a seed ejection mechanism, activating actuators for black seeds, actuators for seeds with defects related to fermentation and immaturity, and actuators for seeds with mechanical damage.
