The present invention consists of a method for objectively and reliably determining the point at which the fermentation stage of the coffee mucilage ends, based on changes in the density of the coffee in the freshly pulped and washed states, taking advantage of the compaction of the mass with the process presented by the mass of washed coffee beans. Likewise, a simple, economic and easy to use implement is disclosed to objectively and reliably determine the final fermentation point of the coffee mucilage.
