A quality characterization was carried out on coffee samples from 400 farms located in 12 coffee-growing departments in the central region of Colombia during the years 2021, 2022, and 2023. From these, the 50 best farms were selected. The selection criteria used for the characterization were: no sensory defects present during the three sampling periods, and a minimum sensory quality score of 84 points according to the SCA (Specialty Coffee Association) scale, which classifies coffee as “very good”. The selected farms were visited for a technical assessment to identify their infrastructure and specific processing conditions. The average SCA score across the three sampling years was 82.2 points, with a maximum of 87. The farms achieved more than 75% healthy beans and less than 3.0% physical defects. All farms used the wet processing, and 92.5% removed the mucilage through spontaneous fermentation. For 75% of the producers, batches of pulped coffee were mixed up to from three different days. 98% had the appropriate capacity and technology for drying, and 75% carried out drying using 100% solar methods. All producers stood out for implementing sorting activities during pulping, washing, and drying processes, ensuring their coffee's quality.
